Bitter taste receptors (T2Rs) are a specialized class of cell membrane receptors of the G protein-coupled receptor family and perform a crucial role in chemosensation. The 25 T2Rs in humans are activated by structurally diverse ligands of plant, animal and microbial origin. The mechanisms of activation of these receptors are poorly understood. Therefore, identification of structural determinants of T2Rs that regulate its efficacy could be beneficial in understanding the molecular mechanisms of T2R activation.
